Edamame Crispy Rice

Another quick and easy salad rendition comin’ at ya! I saw this recipe circling Instagram and knew I had to give it a try. Crispy rice is all the rage right now and I love that this recipe incorporates some greens. This little concoction couldn’t be easier to throw together in a pinch and if you keep the rice stored separately, it’s a great option for meal prep!

I’m not sure why I thought making crispy rice would be difficult but this was super easy! All you need to do is toss the rice with some olive oil and throw it in the oven on convection or in your air fryer at 450 degrees for 10-11 minutes! Either one would work! Yes, that easy.

Here’s What You’ll Need:

  • 3 tablespoons avocado oil

  • 2 cups cooked jasmine rice

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 3 tablespoons white vinegar

  • 1/4 teaspoon sugar

  • 1 1/2 cups diced cucumber

  • 1 medium diced avocado

  • 1/3 cup shelled edamame

  • Pinch of salt

Instructions:

  1. Preheat your oven on its convection setting or your air fryer to 425.

  2. Line a baking sheet or the inside of your air fryer with parchment paper.

  3. Combine rice, avocado oil, and salt on parchment paper and spread out evenly.

  4. Place in oven and set the timer for 10 minutes. If not yet browned on the top, add another minuted.

  5. In a small bowl, combine soy sauce, sesame oil, white vinegar and sugar and whisk.

  6. In a large bowl, combine cucumbers, avocado and edameme.

  7. Cover with sauce mixture and lightly toss (as not to smash the avocados too much).

  8. Sprinkle in crispy rice as desired and enjoy!
