Jo’s Pineapple Mint Salsa

The other day, I stopped by my local nursery and fell in LOVE with the prettiest little pineapple mint plant. And when I breathed in the fresh, citrusy mint goodness, I knew it had to come home with me. This superstar herb can be used in so many ways. Muddled in a cocktail, as a great addition to a fresh fish dish, or mixed into a salsa! I’m all for a healthy snack, but mixing things up and trying new flavors is crucial for me.

This Pineapple Mint Salsa was so easy to make and delivered sweet and fresh flavors with a little bit of a kick! I paired it with my favorite Mary's Gone Crackers Super Seed Everything crackers. It was heaven!

 Ingredients:

  • 2 cups fresh pineapple, diced

  • 1 jalapeno, seeded and diced

  • 1/2 cup chopped red onion

  • Handful of chopped fresh pineapple mint

  • Zest and juice of one lime

  • Pinch of salt!

Instructions:

Mix everything together and enjoy!
