Jo’s Cauliflower, Potato and Leek Soup

If you are like me then you did a little too much indulging over the holidays! Now that we are getting back into the swing of regular life, I am trying to balance out last month’s indulgences with some lighter and healthier meals. This Cauliflower, Potato, and Leek Soup is one of my go-to recipes because not only is it delicious and hearty, but it is also super easy to make!

We all know I’m not a chef so feel free to play with the recipe a little! I made a big pot and added a bit of fennel, and it was a really nice addition.

 

Ingredients:

1 head of cauliflower (cut into small florets)

2 large potatoes (peeled and diced)

1 medium leek (white part only – finely sliced)

2 tbsp. salted butter

3 cups milk

½ cup freshly grated parmesan

4 cloves of garlic

Fresh time to garnish with

Salt and pepper to taste

 

Instructions:

1.     In a large Dutch oven melt the butter over low heat and fry the leeks until soft.

2.     Add garlic and sauté about 1 minute and then add milk, cauliflower, and potatoes.

3.     Simmer, partially covered, until the cauliflower and potatoes are tender. Remove from heat.

4.     Blend all ingredients (I use an immersion stick!) and garnish with parmesan, olive oil and thyme.
