Cinnamon Sugar And Apple Tacos!
Taco Shell:
3-4 tortillas
1/4 C Sugar
1 Tsp Cinnamon
Filling:
3-4 apples (I used Gala!)
1/2 Lemon
2-3 Tsp Cinnamon
1/2 C Sugar
Shell:
Start by mixing your cinnamon and sugar in a bowl. Set aside. You can adjust the combo to taste, I prefer plenty of sugar with a hint of cinnamon.
I have seen a few recipes for shells that are baked in an oven around 400 degrees. But I prefer my shells FRIED! So, start by filling a cast iron pan with oil and heating it up.
As the oil begins to heat, use a circular cookie cutter to cut smaller circles within each tortilla. A large tortilla can usually yield 4 smaller circles.
Once oil is hot, carefully take each circle and make a fold that resembles the hard shell of a taco. Hold it in the hot oil until it begins to take shape. Then using tongs, carefully fry each side.
Once you have a crispy shell, take the shell and immediately dip in in a bowl and cover that puppy with all the cinnamon sugary goodness!
Filling:
Once your shells are fried, set aside to harden and take shape. I use my taco stands to keep them tight, but I have seen others use an upside muffin tin...not gonna lie, it’s kinda genius!
Mix diced apples, sugar, cinnamon, and a quick squeeze of a half of a lemon. Add to a sauce pan and let it all come together. The apples will soften and the sugar will create a yummy sauce surrounding it. Easy as pie...apple pie that is! Sorry, couldn’t resist.
Now you’re ready to assemble! Fill each shell with your filling. And top with whipped cream. These are SO easy and a HUGE crowd pleaser. Last time I made them, I skipped the whipped cream and went for a dollop of ice cream and the kids went nuts!
